1. Manually remove NotoColorEmoji.ttf from system (Options in font manager gui, or maybe /usr/share/fonts/truetype/noto)
2. Build, copy out file, and re-install:

mkdir fontvol
docker build -t emojis
docker build -t emojis .
docker run -v $PWD/fontvol:/fontvol emojis:latest
Find NotoColorEmoji.ttf and re-install via method of choice.
